Description
A cozy, protein-packed twist on classic French toast, this creamy cottage cheese version blends flavor, nutrition, and simplicity into every bite — perfect for lazy weekends or fast, nourishing mornings.
Ingredients
Scale
- 4–6 thick-cut slices of brioche, sourdough, or Texas toast
- 2 large eggs
- ½ cup cottage cheese (small curd or blended)
- ¼ cup whole or non-dairy milk
- 1 tsp vanilla extract
- ½ tsp cinnamon (optional)
- Pinch of salt
- 1 tbsp butter or coconut oil (for frying)
Instructions
- In a blender or bowl, mix cottage cheese, eggs, milk, vanilla, cinnamon, and salt. Blend until smooth or whisk vigorously by hand.
- Dip bread slices into the batter, soaking for 10–15 seconds per side.
- Heat butter or oil in a skillet over medium heat. Cook soaked bread for 3–4 minutes on each side until golden and crisp on edges.
- Serve warm with toppings like fresh berries, banana, maple syrup, powdered sugar, or nut butter.
Notes
For smooth batter, blend cottage cheese first. Use slightly stale bread to absorb the mix better. This toast also works well with savory toppings like avocado and chili flakes.
